Our Menu this week

On the schedule this week is a Mom’s night out, company over one day, ballet, awana, kids to my in-laws for a 3 day, 2 night stay, a Doctors appointment for Malachi, and a get together at my parents house on Sunday.  Actually,this is a really easy week for cooking, because most of the days will be just Mark and I, or with someone else cooking!  Yay!

Here’s the plan for the week:

Monday – Chicken Ritz Casserole and a Green Salad

Tuesday – Hot Dogs, Chips, Cut up Fruit

Wednesday – Bean and Cheese Burritos, Cut up Fruit and Veggies

Thursday – Mark and I are going out to eat with a gift card that was given to us!

Friday – Homemade Pizza and a Green Salad

Saturday – Homemade Mac N’ Cheese, Leftover Fruit and Vegies from the week

Sunday – At my Parents house!

That’s it!  Like I said, super simple and easy this week.  We finished up school this week and I’m sooo excited for the summer break!  I’m ready for easier days (and more time to cook!) for awhile!

What about you, what’s on your menu this week?  If you have kids are they done with school, or do you still have some school days left?

Menu for the week

I was feeling a bit discouraged last night when I was planning out my week, kids school, and menu.  I was feeling like it takes me sooo long to get anything done and comparing my accomplishments to others and coming up lacking… So, I decided to time myself to see how long it actually took me to do my planning.  Here’s a breakdown of how the evening laid out:

6:10 – Home from visiting friends for lunch and fellowship.  Unloaded the car, cleaned out all the trash from the car, nursed the baby, fed the baby, changed the toddlers diaper

6:54 – Got a cup of tea and sat down with my household planner to start the weekly prep…

6:56 – Went to investigate crying child and discovered they wanted to change their clothes and couldn’t unbutton their shirt, helped them unbutton their shirt and change into clean clothes

7:04 – Sat back down to plan…

7:06 – Up to check on crying baby, soothed baby and laid him down in crib for a nap

7:09 – Back to planning…

7:20 – Child comes in with bloody nose, help them clean up their nose and face and change clothes

7:23 – Back to planning…

7:24- “Mom, can you help me put on shoes?”  Sigh, help child put on and tie shoes

7:26 – Back to planning…

7:30 – Kids ask for snack, stop to get everyone apple slices and tie another kids shoes

7:32 - Back to planning…

7: 45 – Complete Meal Plan and Weekly To Do plan! On to school planning…

7:50 – Break up kids fight, take care of crying baby, help kids get jammies on, brush teeth, turn down sheets, read bedtime stories (1 each), tuck in bed, nurse baby, change baby into jammies and put to bed

8:36 – Back to school planning…

9:15 – Done with school planning!

Total time:  3 hours and 5 minutes

Total time spent Planning:   1 hour and 12 min

Whew!  No wonder I feel like it takes me forever to get things done!  What an eye opening experiment!  And this was only a 3 hour time window!

Anyhow, I thought you all might get a kick out of this, now we’ll move on to our menu for the week.  Since I was so busy I only planned main dishes this week.  I’ll wing it with the sides.

* Chilli, Cornbread

* Baked Chicken

* Chicken Salad Sandwiches

* Thursday Night Soup

* Pizza

* Homemade mac n’ cheese

* Tea, Scones, Snacky dinner

How about you all, how do your attempts to accomplish things go?  Better than me?  :-)

Menu for the week

We have a very easy schedule for this week, not much running around.  Which is wonderful so that I can try and catch up on some of the millions (it feels like!) of things that I’m so behind in.  Plus it’s just awesome to not have to be constantly going, going, going.  I’m more of a homebody so I love these weeks when we get to stay home more!

The meals on the menu this week are:

* Baked Chicken, asparagus (I’ve never made it before, any suggestions on how to cook it?), and a fruit salad

* Strawberry Salmon, Steamed Garlic Green Beans, and Fruit Salad

* Egg Salad Sandwiches, Cut up Vegies (Carrots, Celery, Cucumber, Green Pepper)

* Roast Chicken, Potatoes, and Carrots, Cut up Fruit (watermelon?  If I get to the store to get some, yum!)

* Homemade Pizza, Green Salad

* Homemade Mac N’ Cheese, tater tots, Cut up fruit and vegies

* Snacky Dinner – crackers, cheese, leftover cut up fruit and vegies from the week

That’s how it lays out for this week.  I’m so excited to be entering the spring/summer season with more fresh produce!  It makes my mouth water just to think of it all!  Yum, Yum, Yum!

How about ya’ll, what’s on your menu for this week?

Weekly Menu

For some reason, when I sat down to make my menu this week I was seriously lacking in inspiration.  Fortunately I had planned ahead for situations like that by making a list of possible meals so all I had to do was choose meals from my list that I had all the ingredients for.

Here are this weeks meals.

Monday – Pancakes, Fruit

Tuesday – Spaghetti, Garlic Bread, Green Salad

Wednesday – Sub Sandwiches, Apple Slices (This is our portable meal to eat between Ballet Lessons and Awana)

Thursday – Crockpot Lasagna, French Bread, Green Salad

Friday – Pizza, Green Salad

Saturday – Baked Chicken, Steamed Vegies, Fruit Salad

Sunday – Roast Crockpot Chicken, Roast Potatoes and Carrots

So those are my meals for the week.  What do you have planned for this week?

Weekly Meal Plan

Hi all!  How was your week last week?  Ours was pretty crazy, I’m sooo ready to be done with April!  It’s one of the busiest months of the year in our house.

This week is yet again busy, with 3 different birthday parties (one of them one of ours, so there is all that prep to do!), and lots of catch up from the previous busy weeks (you can read about them here, and here) including cleaning the shop, sorting the toys, and making a LONG overdue trip to the library.  Someday I hope to feel like I’m not drowning in my To Do list, but until then… the goal is to keep things as easy as possible!

We had a fair amount of leftovers in the fridge when I planned this weeks menu, and our meal choices reflect that.  I always try to use everything up and hardly ever throw away food.  Here are our dinners for this week:

*Polish Sausage and Peppers sauted together in olive oil, seasoned with salt and pepper, and served over rice, Green Salad

* Lasagna, French Bread, Green Salad, Cupcakes, and Ice Cream (Birthday Meal)

* Meat and Cheese Sandwiches, Vegie sticks

* Leftovers Soup, French Bread, maybe a Green Salad?

* Pizza, Green Salad

*Salsa Verde Beef, Tortillas, Cheese, Sour Cream, Lettuce, Tomatoes, Onions, Salsa, Cut up Fruit

* Quesadillas, Cut up Fruit, Vegie sticks

Quick, Simple, and Easy.  Just what I need for right now in my life!  How about you, what’s on YOUR menu this week?

Our Menu this Week

It’s another busy week here but not quite as much as last week.  We have basically the usual stuff: running the business, homeschool, and general life (cooking, cleaning, etc.) with a few things away from home (Awana, ballet, Mom’s night out, Tea at a Friends, Birthday party).  Our menu is simple, as always at this stage in my life!

* Chilli, Cornbread (a double batch to have some for the next day), and a Green Salad

* BBQ Kielbasa over rice, Green Beans, and Cornbread

* Sub Sandwiches, Carrot Sticks, and Apple Slices

* Baked Chicken, Green Salad

* Pizza, Green Salad

* Mac N’ Cheese, Cut up fruit and vegies

* Snacky Dinner comprised of crackers, cut up vegies and fruit and possible smoothies

I will be away from home a fair amount this week so I went with a green salad for our side dish most days.  I will prep it all on Monday, then not have to worry about any prep the rest of the week, yay!  On Awana day we also now have Emmaline’s ballet lessons, so that will be the day we have the sub sandwiches since we will be eating in the car in between activities.  :-)

What about you, what’s on your menu this week?

This week’s Menu!

Well, it’s another busy week here at the Gregg’s!  We finally were able to pay ourselves (oh, the joys of self-employment!), for the first time since January and I have a list as long as my arm of things we need to buy!  I will be spending a great deal of time in the car and shopping to try and get caught up. Also this week,  I have a Doctor’s appointment, the kids have Awana, Emmaline has ballet, we have company coming over one day, a birthday party one day, and an appointment with the kids Charter School to order curriculum for the fall (they’ll be going one day a week).  Life is crazy!!!

With all that in mind, it was yet another week of quick and easy meals!  I have been doing some freezer cooking, so that will make this week significantly easier!  Here’s the plan for this week:

* Potato Soup, Muffins, Green Salad

* Fried Chicken, Steamed Vegies, Applesauce

* Burritos (from the freezer!), Apple Slices, Carrot Sticks

* Manicotti (also from the freezer!), Green Salad, French Bread

* Homemade Pizza, Green Salad

* BBQ chicken, Green Salad

* Smoothies and Homemade Popcorn

Thank goodness for easy meals!

How about you?  What’s going on in your life this week?  Are you busy like us or having a nice relaxing week?  :-)

Meal Plan for the week

It worked out well that last week was pretty quiet because all of us (me included) got sick! Yuck! It’s a good thing my meals were so simple! Everyone is on the upward slope now, hopefully no more sickness will hit around here for awhile!

This week is busier than last week, but not terribly so.  I have company coming over 2 days, we’ll be gone one evening, and I’m also planning to spend a few days at the shop taking care of some things.  Beyond that it’s just the regular stuff like school, cooking, cleaning, etc.

Here’s the meal plan:

~ Chicken Noodle Soup, Biscuits, Pie

~  Italian Shredded Beef Sandwiches

~ Dinner Out!  This is the first time our family has been out to eat since this trip to Del Taco.  Obviously we don’t get out to eat much!  We are going out this week because the kids don’t have Awana and we wanted to do something special with them.

~  Homemade Pizza, Green Salad.  I’m trying to get back in the habit of making our own pizza.

~ Homemade Mac N’ Cheese, always a hit!

~ Tea, snacky stuff (vegie sticks, fruit), and scones

What’s on your menu this week?

Meal Plan for the Week

One of my recent blog finds is Life as Mom.  I love her menu plans! I love to see what she is serving for HER family of 8!  Since that is one of my all time favorite posts from her I thought you all might enjoy the same from me.  :-)

I like to plan my meals about a week in advance.  I have done as far ahead as a month, but in my current life stage planning a month ahead just feels impossible!

I plan my meals in 3 steps:

1. Check the fridge for foods that need to be used up.

2. Check the pantry and freezer for foods on hand.

3. Check my lists of meals for ideas and make a list of meals for the week.

Pretty simple really.  I usually use what ever I have on hand, I don’t like to have to buy ingredients special for a meal.  The hardest part for me is thinking about side dishes!

Here is my meal plan for this week:

* Beans and Rice with lettuce, tomatoes, olives, cheese, green peppers and sour cream for toppings.  Fruit Salad.

* Salsa Verde Beef served in tortillas with lettuce, tomatoes, cheese, and sour cream.  I don’t make side dishes with this kind of meal anymore because my family doesn’t eat them!

* BBQ Chicken, steamed vegies, cut fruit.

* Easy Manicotti (ie: recipe made up as I go!), green salad, fruit salad.

* Homemade Pizza, green salad.

*Snacky Dinner (bread, cheese, fruit, vegies) – A meal in one so to speak!

* Shrimp!  A special treat from the freezer that I forgot I had!  Green salad.  Or this might end up being smoothies, depending on how busy the day is, ha!

What’s on YOUR menu this week?
